Thai-Style Steak Sandwich Bowl

I was feeling a little motivated today. I worked out and wanted to have a good recovery meal. Full of vegetables and protein. Thus, steak and peppers!

I must say, I only had steak sandwich meat in the freezer and my peppers were going bad, BUT still a good recipe. I wanted to add some heat to the mix without it being too spicy so I used a poblano pepper, a yellow bell pepper and an orange bell pepper. If you're feeling adventurous, I would suggest using a small jalapeño for extra heat.

Super simple and fast recipe because I was starving after my workout. It only took about ten minutes to prep. Feel free to use steak sandwich rolls. I've been working on cutting out simple carbohydrates, so no bread for me.

So here it is my Thai-Style Steak Sandwich Bowl:

Ingredients:

  • Garlic one bulb.

  • Ginger a nugget about 1 inch big.

  • 3 Peppers (or any vegetables you have going bad).

  • Lime wedge.

  • Steak meat (I used 1 portion of steak sandwich meat, you can also use thin stripes of skirt steak too).

  • Trader Joe's Yellow Curry Sauce

  • Cilantro to garnish.

Bowl Directions:

  1. Peel garlic and ginger then roughly chop. Set aside. Slice veggies into fajita-style stripes and set aside. If using large steak, cut again into thin strips just like the veggies.

  2. Add oil (I used coconut but any kind will do) to pan and set to medium heat. When pan and oil are hot add garlic and ginger. Wait until fragrant, about 1 - 2 minutes. Slowly add peppers and cook until soft. Remove from pan.

  3. In same pan, add steak meat. Cook until outside is brown but not completely cooked through. Slowly add curry sauce and finish cooking steak. Remove from heat.

  4. Finally, add peppers to bottom of bowl. Squeeze lime onto peppers. Add steak meat on top of peppers and garnish with cilantro. Enjoy!
